Grilled Summer
Vegetables

Ingredients
  • 1 large, about 1 1/4 lbs, unpeeled eggplant. Sliced in 1/2-inch rounds
  • 1 large, about 3/4 lb green - zucchini squash, sliced diagonally in 1/2-inch rounds
  • 1 medium, about 1/2 lb sweet red bell pepper, halved and seeded then cut in 1/2-inch strips
  • 2 Tbsp your favorite extra virgin olive

Directions
  1. Preheat grill on MEDIUM-HIGH heat for 10 minutes.
  2. Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil.
  3. Drizzle eggplant, zucchini, and red pepper with extra virgin olive oil. Sear vegetable skins on all sides.
  4. Grill vegetables, turning every 1-2 minutes until all sides are grill-marked and vegetables are knife-tender, roughly 10 - 12 minutes.
