Grilled Summer
Vegetables
Ingredients
- 1 large, about 1 1/4 lbs, unpeeled eggplant. Sliced in 1/2-inch rounds
- 1 large, about 3/4 lb green - zucchini squash, sliced diagonally in 1/2-inch rounds
- 1 medium, about 1/2 lb sweet red bell pepper, halved and seeded then cut in 1/2-inch strips
- 2 Tbsp your favorite extra virgin olive
Directions

- Preheat grill on MEDIUM-HIGH heat for 10 minutes.
- Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil.
- Drizzle eggplant, zucchini, and red pepper with extra virgin olive oil. Sear vegetable skins on all sides.
- Grill vegetables, turning every 1-2 minutes until all sides are grill-marked and vegetables are knife-tender, roughly
10 - 12 minutes.
