Pan Seared Simple Acadian Redfish -
Maine Ocean Perch


"From the Gulf of Maine, Acadian Redfish is an abundant species with a firm flesh and mild flavor. The recipe below is simple, delicious and different!"

Ingredients
  • 8 Foley Fresh Acadian Redfish fillets, about 4-5 oz each (service meat & seafood)
  • white all purpose flour (aisle # 8)
  • 8 teaspoons olive oil (aisle # 6)
  • 8 tablespoons butter (diary department)
  • 8 teaspoons shallots, peeled and chopped (produce department)
  • 8 teaspoons fresh thyme, chopped (produce department)


Directions
 
  1. Dust redfish evenly on all sides with pan searing flour; pat off excess.
  2. Heat oil in skillet on MEDIUM-HIGH until oil faintly smokes; add fish.
  3. Turn over when fish changes color about one-quarter of way up 1-2 minutes.
  4. Reduce heat to MEDIUM; cook until internal temp reaches 120 degrees and seared side has turuned paper bag-brown. Check by inserting thermometer halfway into thickest part of fish.
  5. Add butter, shallots and thyme to pan. Melt and blend, but do not burn butter.
  6. Baste fillets; cook until internal temp reaches 130 degrees.
  7. Transfer to clean platter; let rest at least 2 minutes.
