Smoked Salmon Crostini Appetizer
Ingredients
  • 1/2 cup chopped fennel bulb (produce department)
  • 1/4 cup chopped green onions - scallions (produce department)
  • 1 tablespoon Colavita extra virgin olive oil (aisle # 6)
  • 2 teaspoons chopped fresh dill (produce department)
  • 1 teaspoon freshly grated lemon rind (lemons from produce department)
  • 1 ½ tablespoons fresh lemon juice (lemons from produce department)
  • 1 teaspoon freshly ground black pepper (spice rack aisle # 8)
  • 3/4 pound cold-smoked salmon, cut into thin strips "service meat & seafood department)
  • 30 slices, ½ inch thick, about 18 ounces French bread baguette slices , toasted
  • ½ cup Alouette light style garlic and herb brand spreadable cheese (food court cheese department)
  • Fresh dill sprigs (produce department)


Directions
 
  1. Combine the first 8 ingredients, cover and chill at least I hour.
  2. Spread each toast slice with ½ teaspoon cheese and 1 tablespoon salmon mixture.
  3. Garnish with fresh dill sprigs, if desired.
