"Cuscus alla Trapanese" Italian Shrimp Couscous Side - Dish
Ingredients
- 2 Tbsp Colavita Extra Virgin Olive Oil (aisle # 8)
- 1 small onion, minced (produce department)
- 1 cup sliced Dole carrots (produce department)
- 1 zucchine, cut in thin julienne strips (produce department)
- 1/2 lb raw shrimp, peeled and deveined (service seafood department)
- 6 oz Near East "original - plain" couscous (aisle # 7)
- 2 cups Snows clam broth (aisle # 8)
College Inn chicken broth (aisle # 6)
- 1/2 cup Progresso Italian Whole Tomatoes, chopped (aisle # 7)
Directions

- Heat oil in a large nonstick skillet on MEDIUM-HIGH. Add onions and cook 1 min, stirring often.
- Add carrots; cook 2 min. Add zucchine; cook 2 min. Add shrimp; cook 1 min. Add couscous; cook 1 min.
- Stir in broth and season with salt and fresh ground black pepper. Bring to a boil then move skillet off burner.
- Top with chopped tomato and let sit, covered, for 6 min. Fluff with a fork and serve.
