Chicken Breast Tenders
With Smoky Black Bean Sauce

"Serve with black bean dip and tortilla chips."

Ingredients
  • 1/4 cup fat-free, less-sodium chicken broth
  • 2 teaspoons dry spice onion powder
  • 1 teaspoon bottled minced garlic
  • half teaspoon dry spice chili powder
  • half teaspoon white wine vinegar
  • 1/8 teaspoon salt
  • dash of dry spice ground red pepper
  • 1 19 ounce can black beans, rinsed and drained
  • 1 can - 14.5 oz can plain diced tomatoes
  • half teaspoon Hickory Liquid Smoke flavoring
  • 2 tablespoons butter
  • Cooking spray of your choice
  • 16 to 18 ounces raw uncooked boneless chicken breast tenders, about 16 tenders


Directions

  1. Combine first 9 ingredients in a small saucepan and bring to a boil. Reduce heat, and simmer 8 minutes.
  2. Stir in smoked seasoning; cook for 2 minutes. Remove from heat and stir in butter.
  3. While sauce cooks, heat a large nonstick skillet over medium-high heat. Sprinkle chicken tenders with 1/8 teaspoon salt. Coat pan with cooking spray. Add chicken to pan; cook 2 minutes on each side or until done.
  4. Serve with sauce.
