Chicken Breast Tenders With Smoky Black Bean Sauce
"Serve with black bean dip and tortilla chips."
Ingredients
- 1/4 cup fat-free, less-sodium chicken broth
- 2 teaspoons dry spice onion powder
- 1 teaspoon bottled minced garlic
- half teaspoon dry spice chili powder
- half teaspoon white wine vinegar
- 1/8 teaspoon salt
- dash of dry spice ground red pepper
- 1 19 ounce can black beans, rinsed and drained
- 1 can - 14.5 oz can plain diced tomatoes
- half teaspoon Hickory Liquid Smoke flavoring
- 2 tablespoons butter
- Cooking spray of your choice
- 16 to 18 ounces raw uncooked boneless chicken breast tenders, about 16 tenders
Directions

- Combine first 9 ingredients in a small saucepan and bring to a boil. Reduce heat, and simmer 8 minutes.
- Stir in smoked seasoning; cook for 2 minutes. Remove from heat and stir in butter.
- While sauce cooks, heat a large nonstick skillet over medium-high heat. Sprinkle chicken tenders with 1/8 teaspoon salt. Coat pan with cooking spray. Add chicken to pan; cook 2 minutes on each side or until done.
- Serve with sauce.
