Roasted Leg Of Lamb
With Easy Chili & Garlic Sauce

Ingredients
    Lamb:
  • 1 6 pound semi boneless leg of lamb, trimmed
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Cooking spray of your choice


  • Sauce:
  • 1 5 ounce jar Roland brand "Thai Style Spicy" sweet chili sauce
  • 2 ounces white cooking wine
Directions
 
  1. Preheat oven to 425 degrees.
  2. To prepare lamb, sprinkle lamb evenly with 3/4 teaspoon salt and pepper. Place lamb on broiler pan coated with cooking spray. Bake at 425 degrees for 21 minutes or until internal thermometer placed in thickest part of lamb reaches 120 degrees for medium rare, 140 degrees for medium or to desired degree of doneness.
  3. Take lamb out of oven and place on a cutting board and let stand at room temperature for 10 minutes before slicing.
  4. To prepare sauce, combine 5 ounce jar of sweet chili sauce and 2 ounces of white wine in a bowl and mix until thoroughly combined. Place in sauce pan and simmer for 5 minutes. Serve sauce with lamb.
