Broiled Honey - Dijon Lamb Chops

Ingredients
  • 2 tablespoons Roland Dijon mustard
  • 2 tablespoons fresh or 2 teaspoons dried rosemary, crushed
  • 2 tablespoons chopped fresh or 2 teaspoons dried mint flakes
  • 4 teaspoons honey
  • 1/2 teaspoon coarsely ground black pepper
  • 4 loin lamb chops, about 4 to 5 ounces each

Directions
 
  1. Preheat broiler.
  2. Combine first 5 ingredients in a small bowl, and stir well.
  3. Place lamb chops on a broiler pan. Broil 5 minutes on each side.
  4. Brush mustard mixture over chops.
  5. Broil chops 2 more minutes on each side or until desired degree of doneness, basting occasionally with mustard mixture.
