Grilled Pork Chops with Italian Relish


Ingredients
  • 3/4 pounds plum tomatoes, seeded and chopped
  • 3/4 cup chopped red onion
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablesoon chopped fresh basil or
    1 teaspoon dried basil
  • 1 teaspoon dried oregeno
  • 4 3/4 to 1" thick center cut pork chops


Directions
  1. Combine first 7 ingredients in a small bowl. Season with salt & pepper. Let stand at least 15 minutes or up to 1 hour.
  2. Prepare BBQ at medium heat. Arrange pork chops in a 8 by 8 by 2 glass baking dish. Drain liquid from relish; spoon liquid over pork. Let stand for at least 15 minutes, turning occasionaly under refrigeration.
  3. Grill pork until cooked throughout, about 6 minutes per side.
  4. Transfer pork chops to serving plates. Spoon relish over each and serve.
