Mini Frittatas With Ham & Cheese
Ingredients
- Cooking spray of your choice (aisle # 8)
- ½ cup finely chipped yellow onion (produce department)
- 2/3 cup chopped reduced fat Russer ham, about 2 ounces (service deli department)
- 1/3 cup, about 1 ½ ounce, shredded reduced fat extra sharp cheddar cheese (dairy department)
- 2 tablespoons chopped fresh chives (produce department)
- 1/8 teaspoon dried thyme (spice rack end of aisle #8)
- 18 teaspoon black pepper (spice rack end of aisle # 8)
- 4 large white eggs (dairy department)
- 1 large egg (dairy department)
Directions

- Preheat oven to 350 degrees.
- Heat a large non-stick skillet coated with cooking spray over medium high heat. Add onion and saute for 2 minutes until crisp and tender. Add ham and saute for 3 minutes.
- Remove from heat and cool 5 minutes.
- Combine remaining ingredients in a large bowl and stir with a whisk. Add ham mixture and again stir with a whisk.
- Spoon mixture into 24 miniature muffin cups coated with cooking spray. Bake at 350 degrees for 20 minutes or until set.
